Pan Seared Mahi Mahi

Spouting Horn, Lawai, Kauai, HI

4 mahi mahi fillets (4 oz. each)
1 T. furikake (recipe follows)
2 tsp. olive oil

Defrost mahi mahi fillets as directed in cold water.  Remove packaging, rinse and pat dry.  Preheat oven to 400 degrees F.  Dust both sides of fillets with furikake.  Heat olive oil in ovenproof skillet over medium high heat.  When skillet surface is 325 degrees F ., place mahi mahi fillets in it.  Sear without turning until bottom is slightly golden and fillet has turned opaque about 1/3 up from bottom.  Flip fillets so seared side is up and place in oven until center of thickest piece registers 130 degrees F. (This will only take 4 – 5 minutes.)  Serve immediately with lilikoi sake beurre blanc and rice. 
(If ovenproof skillet is not available or for larger numbers of servings, sear as directed and transfer, seared side up, to rimmed baking sheet.  Finish in oven.)

Makes four entrée servings.

Furikake

¼ c. black sesame seeds
¼ c. white sesame seeds
2 sheets nori
1 tsp. salt
1 tsp. sugar

 

Cut the sheets of nori into very small pieces (1/8” x ½”).  Toast sesame seeds over medium heat in skillet until white seeds are starting to brown and turn fragrant.  Add nori and stir until nori is crisp and shiny.  Remove from heat, stir in salt and sugar.  If desired, use scissors to snip nori into even smaller pieces.  Cool thoroughly before storing in sealed container.
